Publication Health enhancing traditional foods in Brazil : an interdisciplinary approach to food and nutritional security(2012) Abadio Finco, Fernanda; Graeve, LutzThe Brazilian nutritional profile is currently characterized by the so-called "nutrition transition process" i.e. the population presents nutritional status characteristics of both developing and developed countries. Therefore, malnutrition is present not only in the form of undernutrition but increasingly also presents as overweight and obesity. Some studies suggest that this is not only a particular problem of urban societies but also of rural communities. Recently, Brazil has impressively advanced on issues which address nutrition, agriculture and health within a sustainable framework. One of the recent initiatives encompasses the Brazilian Food and Nutrition Security Policy, which could be considered as the vanguard of this theme by covering different dimensions of nutritional issues, as defined hereunder: ?Food and Nutrition Security is the achievement of the right of all people to access food regularly and permanently, with quality and enough quantity, without compromising the access to other basic needs, based on food practices to promote health, with respect to cultural differences and being social, economic and environmentally sustainable?. Since the Brazilian Food and Nutritional Policy is characterized by a broad view on food and nutrition, different components related to food and nutrition have to be considered. Therefore, the health side of the food, in a pluralistic vision has to be taken into account. Thus, food and their consumers are unavoidably connected. Beyond classical nutrients, much attention has recently been focused on bioactive compounds and their preventive role on non-communicable diseases such as diabetes, cardiovascular diseases and cancer. Therefore researchers are increasingly interested to unfold the preventive biochemical processes of these compounds. Hence, the current research aimed to investigate health enhancing properties of traditional Brazilian fruits within the Food and Nutrition Security definition of the country. Given the interdisciplinary feature of the topic Food and Nutrition Security, the work was performed in two stages. The first one encompasses a nutritional survey with two rural communities in APA ? Cantão, Tocantins State, Brazil and the second part comprises experimental laboratory research. The outcome from the nutrition survey showed a high level of food insecurity among the families (84.2%). The nutritional profile of the study population expressed a high prevalence of overweight for the adults (53.7%). Regression analysis showed that the high Body Mass Index (BMI) is influenced by the consumption of an imbalanced diet and the physical activity level. Furthermore, women had a higher prevalence of overweight and obesity in comparison to men. Another observation is that rural communities have a monotonous diet with very low consumption of fruits and vegetables. Besides the negative effect on their body composition, this last result points to the risk of developing micronutrient deficiencies, i.e. hidden hunger. Based on the outcome and the demand presented by the participants in the nutrition survey, two fruits available in the region were chosen to investigate their possible biofunctional properties. Different assays were performed with Bacaba (Oenocarpus bacaba Mart.) and Jenipapo (Genipa americana L.) phenolic extracts. Extracts from both fruits showed antioxidant and antiproliferative capacities. Since bacaba displayed higher activities than Jenipapo, this fruit was chosen for a more detailed investigation of the biochemical mechanisms involved. The results showed that bacaba phenolic extracts induced apoptosis in MCF-7 breast cancer cells through the mitochondrial pathway. Caspase-6, -8 and -9 were activated when compared to the untreated control in a dose dependent manner (p<.05). However, caspase-9 showed the highest activation. Since MCF-7 cells do not express caspase-3 and based on additional investigations on PARP (Poly (ADP-ribose) polymerase) - cleavage, the experiments suggest that caspase-9 plays an important role in the observed apoptotic effect. The laboratory work thus emphasizes the potential healthy properties of traditional fruits from the Brazilian biodiversity with high antioxidant activities. Altogether, the results indicate the need of a better nutritional education with the involved communities in order to promote healthy eating practices and to increase the consumption of fruit and vegetables. Based on this, it is suggested for government and policy makers to take action in rural communities. Indeed, it is undeniable that the biodiversity available in Brazil is a huge treasure and source of novel ?superfruits?. Therefore, the current work reinforces the development of research in this area in order of identify health enhancing neglected traditional fruits and to promote their consumption, add value and generate income to small farmers and traditional communities with not only the improvement of their economic power, but also of their diets and health respecting their tradition and culture. Not to mention the contribution to biodiversity preservation since plants that were merely discarded could now have a multifactor value in line with the Brazilian Food and Nutritional Security policy.Publication Public attitudes towards genetically modified provitamin A Cassava in Brazil(2010) Gonzalez Rojas, María Carolina; Qaim, MatinCassava is a basic staple food crop with worldwide distribution, mainly in developing countries. A fundamental source of energy for the poor, cassava grows well on marginal soils and resists pests and drought. In Latin America, Brazil is the largest cassava producer and consumer. The crop is especially important in the northeastern (NE) part of the country, where poverty and malnutrition rates are higher than in the rest of the country. However, despite the crop?s dietary importance, relatively little is known about consumer preferences, which holds true not only for Brazil but also for other developing countries. Understanding consumer preferences is crucial for technology and market development, especially in the context of provitamin A biofortification, as this entails a yellow-colored cassava root. The first article, titled ?Consumer Preferences for Cassava Characteristics in Pernambuco, Brazil?, addresses this research gap. Consumer preference for different cassava attributes are analyzed using household survey data and econometric techniques. A hedonic price model is specifically developed to estimate the values that consumers place on specific product attributes. Results show the most important characteristics for local consumers are ease of peeling, time of cooking, and texture; however, root color and size as well as market location are other relevant attributes in determining price. The second article, titled ?Consumer Acceptance of Second-Generation GM Foods: The Case of Biofortified Cassava in the Northeast of Brazil?, examines whether consumers would appreciate provitamin A biofortification and accept GM cassava. For this purpose, stated preference data, collected as part of the household survey, are used. Findings suggest that attitudes towards GM biofortified cassava are generally quite positive among local consumers. Three-quarters of all respondents in the survey said they would support the introduction of this new technology. Using contingent valuation techniques, consumers were shown to be willing to pay an average price premium of 64% for GM biofortified cassava. This is high but not unrealistic, given that vitamin A deficiency and related health problems are widespread in NE Brazil. In addition, a contingent ranking choice experiment was used to better understand the trade-offs between different cassava characteristics and estimate the partial willingness to pay (WTP) for each relevant attribute. For the provitamin A attribute alone, the average consumer is willing to pay a large premium of 160%. However, a discount is required for the color change of cassava from white to yellow (-29%), and an additional discount results from the fact that the cassava is genetically modified (-61%). These are important findings for biofortification research programs that have to make choices between conventional and GM breeding techniques. It is noted that a significantly positive WTP does not imply that GM provitamin A cassava will indeed be sold at a premium. The technology is being developed by the public sector with the aim to reduce malnutrition among the poor, so a low price should be sought to enable easy access. Hence, the WTP survey is a tool to better understand consumer attitudes rather than an approach to develop a pricing strategy for a new commercial product. The third article, titled ?Stakeholder Positions toward GM Food: The Case of Vitamin A Biofortified Cassava in Brazil?, gathers experiences from around the world and shows that stakeholder positions can crucially influence the efficiency of GM regulatory approaches and the success of new technologies. This research builds on a survey of a large range of local stakeholders. Overall, stakeholder perceptions about GM foods are relatively positive in Brazil. Statistical analysis shows that three groups of stakeholders can be distinguished: those in favor of GM crops, those against, and those that have a more or less neutral position. Representatives of local and multinational industries and those of several governmental entities belong mostly to the first group; international and national NGOs form the second group, while scientists are mostly found in the third group. Information sources and institutional/personal relationships influence individual stakeholder positions, as do socio-demographic characteristics, such as the level of education and age. An important result is also the high level of trust that stakeholders in Brazil have, in general, in the country?s research and academic sectors. Therefore, taking into account the relevance of information and the role played by the research sector, an effective system of distributing GM crop information via government agencies and/or public media is necessary to complement the knowledge of consumers so that they can make their own informed decisions.Publication Socio-economic evaluation of sunflower agri-food chains in Brazil in view of the potential implementation of innovative plant protein ingredients for human consumption(2018) Sousa, Lucas Oliveira de; Berger, ThomasThis study aimed at performing a socio-economic analysis of an agri-food chain focused on a non-established crop in view of the potential implementation of food innovations, using sunflower agri-food chains in Brazil and upcoming sunflower high-quality food protein ingredients as a case study. Thus, fieldwork was carried out in the main sunflower-producing areas between April and August 2016 for data collection among sunflower chain agents from the input, farming, and processing segments, besides representatives from the research sector. Section 1 applied a multiple case study embedded design to describe and analyze the dynamics of operation of sunflower agri-food chains in Brazil. The analysis followed a theory-driven approach based on concepts from transaction costs economics and the social network approach. The findings indicated an environment of high transaction costs, in which the economic transactions are ruled by formal and relational governance structures, and made possible through knowledge diffusion, under the coordination of a processing company. Nevertheless, the sustainable long-term operation of the sunflower chains is constrained by typical limitations of non-established crops, such as restricted market structure, land use competition with well-established crops, and technological limitations regarding plant breeding, and control of pests and diseases. Moreover, Section 1 revealed that a farmer-led sunflower chain in the state of Mato Grosso (MT) stood out regarding the operational stability, suggesting a closer analysis of this farmers’ collective endeavor, which was performed in the subsequent section. Thus, Section 2 adopted a single case study embedded design to describe and analyze the establishment process of the leading Brazilian sunflower agri-food chain located in MT under the regime of farmers. The analysis followed a framework that regarded the agri-food chain establishment as an entrepreneurial process. The findings indicated that the process of establishment of this sunflower chain has been a complex social-economic endeavor stemming from a set of interconnected driving forces composed of entrepreneurial skills, social network, resource availability, and crop suitability. Furthermore, Section 2 suggested the existence of a supportive institutional environment for the establishment of new sunflower agri-food chains in MT among soybean farmers, besides indicating the need of examining the potential for sunflower production expansion in MT, which was the focus of the next section. Thus, Section 3 applied an integrated assessment approach that combines an agent-based model (ABM) with a crop growth model to investigate the potential for sunflower land use expansion in double-cropping systems prevailing in MT. The ABM was implemented using the software package Mathematical Programming-based Multi-Agent Systems (MPMAS), and the crop yields simulations were implemented using the process-based model for nitrogen and carbon in agro-ecosystems (MONICA). The findings indicated the existence of a potential for the expansion of the sunflower production in MT. Nevertheless, this potential is constrained by the distance between the producing areas and the processing facilities. Moreover, the simulations confirmed the land use competition between sunflower and maize, showing that sunflower land use is strongly associated with agents’ expectations regarding prices and yields of sunflower and maize. However, the results also revealed a complementary effect between these two crops due to the different water deficit tolerance of these crops. Section 3 also highlighted that the simulated potential production of sunflower would require further increases in the current processing capacity installed in MT. To conclude, the analyses performed in Sections 1, 2, and 3 indicated relevant aspects to be considered by innovators interested in implementing food innovations related to non-established crops. The scarcity of feedstock suppliers requires the adoption of contractual and relational governance structures coupled with the provision of technical assistance at the farming level. Moreover, farmers with a recognized professional and social reputation as well as leadership abilities play an important role in influencing other farmers to adopt a non-established crop. Finally, the suitability of the crop for the agricultural system prevailing in the region is essential for ensuring a minimum level of farmers’ willingness to adopt a non-established crop. In this regard, particular attention should be given to the land use competition with well-established crops.
